Eat the Rainbow: A Colorful Cooking Class for Vibrant Health

Saturday August 15th, 6:30 to 10:00PM

Chef Jennifer Magrey (Nutritional talk by Nancy Kirkiles-Smith, PhD)

We've all heard the advice to "eat your fruits and vegetables," but did you know that the colors of plant foods actually reveal many of their unique health benefits?

In this fun, hands-on cooking class, we'll explore the science behind eating the rainbow while preparing a vibrant menu inspired by every color of nature's palette. Each color group contains different phytonutrients—natural plant compounds that support everything from heart health and immunity to brain function and healthy aging.

Along the way, we'll discuss the nutritional power of each color:

❤️ Red Foods
Rich in lycopene and betalains, red fruits and vegetables may support heart health, circulation, and healthy aging.

🧡 Orange Foods
Packed with carotenoids such as beta-carotene, which support eye health, immunity, and skin health.

  • Chickpea Salad with Turmeric, Carrots & Garam Masala- A bright and flavorful salad featuring protein-rich chickpeas, sweet carrots, and warming spices.

💛 Yellow Foods
Contain antioxidants and anti-inflammatory compounds that may help protect cells and support digestive health.

  • Elote Salad- Sweet grilled corn tossed with lime, cotija cheese, and a creamy chili-lime dressing.

💚 Green Foods
Loaded with folate, magnesium, chlorophyll, and vitamin K, supporting bone health, detoxification, and cardiovascular wellness.

  • Spinach & Green Onion Basmati Rice- Fragrant basmati rice infused with spinach, green onions, garlic, and fresh herbs.

💜 Purple Foods
Contain polyphenols and anthocyanins that may help reduce inflammation and support heart and cognitive health.

  • Thai Sesame Red Cabbage Salad- Crunchy red cabbage tossed with peanuts, sesame, lime, and vibrant Thai-inspired flavors.

💙 Blue Foods
Rich in anthocyanins, powerful antioxidants linked to improved brain health and healthy aging.

Whether you're looking to boost your nutrition, discover new ways to cook vegetables, or simply enjoy a beautiful meal bursting with color and flavor, this class will leave you inspired to make your plate—and your health—a little brighter.
