We welcome Chef Michele Castelli into the kitchen for an amazing Italian Holiday cooking class!
Michele is a professionally trained chef whose culinary journey began at the Culinary Institute of America in Hyde Park, NY. She gained experience in top New York restaurants before moving to Italy to deepen her skills and immerse herself in its rich food culture.
For the past 25 years, Michele has divided her time between Connecticut and Capri, Italy, where she and her husband run a small hotel called La Tosca. Her cooking reflects this dual life—grounded in Italian simplicity, shaped by American creativity, and always centered on seasonal, approachable ingredients.
In this class, Michele has created an amazing menu for us to cook. We will begin with an assortment of grilled and marinated vegetables—vibrant, smoky, and kissed with Mediterranean herbs- making fresh ricotta may also be part of the evening. Next a Savory Torta Rustica, a classic Neapolitan pastry layered with rich, savory fillings and golden, flaky perfection. We will enjoy delicate cannelloni made with savory crepes, filled with traditional ingredients that celebrate the heart of Italian home cooking. For the main course, tender Chicken Saltimbocca—pan-seared with prosciutto, sage, and white wine—lives up to its name, “jumping in the mouth” with flavor. The meal concludes with Torta Caprese, the beloved chocolate and almond cake from the Isle of Capri—decadent, flourless, and simply unforgettable.
