Chef Dawn Bruckner of La Belle Aurore in Niantic


Chef Dawn Bruckner first learned cooking first from her two Italian grandmothers, then took a year off from getting a BS in Business from Bryant University to attend Johnson & Wales.  There she learned the basics of knife skills, stocks & sauces, pastry and butchering. She then worked alongside Swiss chefs who owned a prepared food & catering shop in New York.  

Dawn was a private chef & caterer in Washington DC before moving to Southeastern Connecticut where she opened La Belle Aurore in 2006 . La Belle is a true Farm to Table restaurant procuring cheese, meats & produce from local farms within a 50 mile radius. The menu changes frequently based on what the farmers have to offer.
