We are pleased as punch to have Emily Florentino back for our Vegan classes! In this class we will focus on the late summer bounty that is peak at that time- corn, tomatoes, basil.... hopefully my eggplant will have yielded something! It all sounds so delicious! I am most curious about the almond ricotta!

peach panzanella with heirloom tomatoes, fresh corn, bunches of basil, balsamic drizzle and cornbread croutons (vegan, gluten free)
stuffed eggplant with sunflower romesco and cilantro mint raita (vegan, gluten free)
golden milk popsicles (vegan, gluten free) (make ahead)
blackberry cast iron skillet cobbler with lemon and basil or thyme (vegan, gluten free option)
