Buckwheat is a superfood has not risen to the attention of quinoa or kale but should be right up there on your list of healthy things to eat.  It isn’t a wheat at al, I have no idea who named it, but it’s actually a seed!  The gluten-free/ plant-based world has paid attention to buckwheat for it’s being a complete protein and it's lack of gluten but you hear little about it.  It is a great source of protein and fiber, as well as an array of antioxidants and other nutrients.  Buckwheat can be a good addition to an anti-inflammatory diet for cholesterol lowering and blood pressure benefits.  Buckwheat also has a low glycemic index so easy on the blood sugar for diabetics.  It's also really versatile- you can use it in so many ways!!  It came to my attention years ago when I was in Paris and went to the amazing crepe restaurant in the Marais called Breizh Café. I wondered why the crepe was darker than usual.  It was buckwheat and made a delicious crepe! 

I asked Amelia Lord who specializes in wholesome cooking to teach a class and she thought to sing the virtues of buckwheat!  I wholeheartedly agreed and I think that this menu is an amazing introduction to this very versatile ingredient. It also seemed like a great brunch or fun dinner party menu. I've wanted to do a crepe class for the longest time and viola!
