French Classics Cooking Class
Chef Arno Jullien
We welcome Chef Arno Jullien to our country and kitchen! Arno has spanned the globe and landed in CT for a few years. We are thrilled to have discover him! Since Arno is French we felt that a classic French menu would be very appropriate for the holiday season. This class will introduce us to a number of important culinary techniques in the preparation of a fabulous meal! We will start by preparing seasonal vegetables and a aioli and rouille mayo (a traditional spicy French mayo), a green salad with a classic French vinaigrette and we will learn to make a fine beurre blanc a mother sauce and pommes vapeur (steamed potatoes). Our meal will end with lemon tarts with meringue. It all sounds delicious!

About Chef Jullien
Chef Jullien always wanted to be a chef even before he was a little apprentice at the age of 13. But before he could become one, he used to travel and work in many countries. Most recently, he worked at chef Emmanuel Lehrer’s beautiful 5* Relais et Chateaux Hôtel Restaurant Le Mas de Pierre. Then at Forum Jorges François chef Philippe Bouchet supervised his leadership with a brigade of 10 cooks, where they designed Zero Waste menus for 100+ hungry mouths on a daily basis. In the last 3 years he worked in Auckland, New Zealand, where he developed a private chef business. In September 2019, He moved to New Haven, where his composer wife studies at Yale university.
