The first of my favorite cookbook classes will be recipes from the Via Carota cookbook.  This little gem of an Italian restaurant is located in NY's Greenwich Village and owned by James Beard Award winners Jody Williams and Rite Sodi.  If you have ever been you will know how special and wonderful it is!  This year they released the cookbook with their favorite recipes.  We did this class for a private event and it was fantastic!  I did switch the type of risotto to make it more citrus seasonal!  The olive oil cake was such a hit there wasn't a piece left- there were only 5 students!
